Similarly sophisticated “alcoholic” offerings are the lemon sorbet with 1973 calvados “Chateaux du Breuil “ and the raspberry sorbet containing 32-year-old “Tamnavulin” whisky, blackberry sorbet with “Laberdolive” armagnac of 1985 and strawberry sorbet with traditional and vintage Modena balsamic vinegar!
The sorbet is placed in a large glass. Just enough distillate is added to render the mix semi-dense, stirring with a teaspoon only in the case of the blackberry sorbet. It is decorated with a blob of freshly whipped unsugared cream!
A few teaspoons of thick mature vinegar should be poured onto the wild strawberry sorbet!
