LIME SORBET
This fruit probably comes from a tree of Malaysian origin which, as often happens, was exported by missionaries. The lime, now in plentiful supply in Latin America, belongs to the Rutacee family, and its organoleptic properties lie somewhere between that of a lemon and a bergamot, on account of its essential oil containing above all pinene, geraniol and linalyl, making it an intensely aromatic fruit with thrilling aftertastes.

We suggest this sorbet be consumed in combination with armagnac or "crema" ice-cream.
